Celeriac mayonnaise Extra virgin olive oil and sichuan pepper

Ingredients for 4 people:

  • 250 g of celeriac,
  • 100 g white potatoes,
  • 6 tablespoons Angimbe Natures extra virgin olive oil
  • sichuan pepper,
  • salt

Preparation

  1. Carefully peel the celeriac and wash it, peel and wash the potatoes in the same way, cut the two vegetables into ½ cm thick slices and place them in a basket.
  2. Steam cook them for 15 minutes to make them very tender.
  3. Transfer the steamed vegetables to a tray and cool them well, then place them in a tall blender glass.
  4. Immediately add a pinch of salt, 2 tablespoons of oil and a grind of Sichuan pepper, start blending and gradually pour in the remaining oil until you create a frothy and creamy mass similar to common mayonnaise, not too firm.
